I found a new flavor combo that works like magic.
Finely chop onions and let them sit in lemon juice while you make the rest of the salad, this will mellow the raw onion flavor. Finely chop red peppers, fennel, green apple and parsley. Mix everything together with a bit of olive oil, salt and pepper. Serve with a piece of Greek feta and some crusty bread.
Onion = savory
Red pepper = sweet
Parsley = fresh
Fennel = surprise (faint liquorice flavor)
Green apple = sour
