Chicken roulade

Finely chop 1/2 red onion and 1/2 pear and sauté in butter until caramelized.
Mix in 1 teaspoon balsamic vinegar reduction(mom makes the best).
Flatten 2 chicken breasts, season with salt and pepper.
Spread 1 teaspoon of goat cheese on chicken and add half the onion mixture.
Roll the chicken breast as you would with sushi.
Tightly wrap the chicken in plastic wrap and submerge in boiling water for 15 mins.
