I never know what to do with leftover rice, truth be told I don’t especially enjoy rice to begin with and the next day when I open the fridge and see last night’s boring starch I never get excited. 10 minutes on Google and I found a great idea for transforming my rice into something great by stuffing it with my favorite ingredients; meat and cheese.
In a bowl mix:
-2 cups cooked rice
-an egg
-2 tablespoons oregano
Form your rice mixture into small balls (just like making meatballs), poke a hole in the centre pushing it 3/4 of the way, place half a slice of prosciutto, a basil leaf and a small square of mozzarella in the centre and close the hole and place your little stuffed ball on a baking sheet.
Bake in a 400 degree oven until they are firm and crispy. Don’t go flipping crazy, your balls might crumble if you try and flip them too soon or often. I flipped once and they turned out great.
I served it with a spicy tomato sauce:
-tomato paste
-spicy red pepper sauce
-oregano
-a little hot water with sugar
