Pressure cooker Tom Yum soup.

Throw in your pressure cooker:

-Chicken legs and thighs

-1 large diced onion

-6 cloves of garlic

-2 cups chicken broth

-1 tablespoon grated ginger

-1 tablespoon grated lemongrass

-Juice of 2 limes

-4-6 hot Thai chilies

-1 teaspoon ground cumin

-1 teaspoon ground coriander

-a pinch of salt

 

Set to high pressure and cook for one hour. Let depressurize naturally (takes about 10 minutes).

Add 1 diced red pepper and 1 can of coconut milk, adjust seasoning if needed and simmer for 15 minutes. Serve with a handful of fresh cilantro and basil.
