Quail eggs, smoked salmon and avocado, tuna tataki.

After spending a ridiculous amount of time cracking open the little quail eggs, fry them in a pan then spray them with a soy sauce, rice wine vinegar and sugar mixture. Dust with black pepper.


Smoked salmon cubes tossed with wasabi, soy sauce and green onions. Place on top of avocado.


Sear the tuna in a smoking hot pan on all sides. TatakiĀ  sauce: soy sauce, lemon juice, chopped shallot, chopped ginger and toasted sesame seeds. Top everything with green onions and chili threads.
