Matt’s Christmas gift put to use. Grill your food on the top rack while your cheese melts in drawers under the grill. Pure magic.
Matt improved it with mushrooms, more cheese and bacon.
Carla and I made him a special “cheese cake”. The bottom wheel is a French double cream and the top one is a goat cheese from Quebec.
I decorated the cake with almonds, chili peppers and black currants. We piped honey on a piece of cardboard and used that as glue to write Happy Birthday in black currants.
Due to warm weather conditions, our birthday weekend ski trip is postponed .
In lieu, we are spending the weekend under our home-made fort, eating cheese and drinking champagne.
Carla and I started up wine class again.
The lesson was called “From Pinot to Merlot”
We tasted a Pinot Noir from France, a Syrah from Côte du Rhone, a Merlot from Burgundy and a Chilean Cab Sauvignon.
As we don’t believe in spitting while tasting, the evening was chalk full of giggles, silly stories and dancing.
The Chilean Cab Sauvignon was the least expensive and the night’s favorite.

1/2 cup cottage cheese
1 tablespoons confectioners sugar
2 tablespoons jam
1 cup cottage cheese
2 tablespoons diced red onion
1/4 cup lox, chopped
1/4 cup dill, chopped
Pinch of salt & pepper

Thank God Matt was able to fix it for me. We had “The Talk” about how to take care of your electronics. I thought machines serve YOU but I guess it’s the other way around.
So here’s a run down of my last week here in Victoria:
Carla, Andrew, Matt and I saw the band Men without Hats at club 9one9. It was amusing. We sang, we danced and as a bonus, they played ABBA’s S.O.S. song as their encore performance!
Saturday, May 7th was mom’s birthday and everyone showed up!
Mamma Kate and Marley stayed for a long time. Marley is the most laid back child in the world. We all loved holding her.

Marie Josee, mom and Sandra all have their birthdays in May.
Matt and I stayed over night and celebrated mother’s day with mom. We had a Mimosa party and watched the movie Julie & Julia. Love you mom!
The rest of the week has been; work, food, dance parties in the living room and a lot of pre-trip hanging out with both Matt and the Kat. Sweet chili roasted chicken with arugula and feta salad.
Lebanese steak tartar (Kibbeh Nayeh) with home-made hummus. My favorite food in the world!
Matt and I celebrate our anniversary every month. It’s silly and fun and a little bit crazy like us. The night before “the big day” we went to The Oyster Bar and consumed 48 oysters and many champagne flutes.
The day of, to keep with the seafood theme, I made shrimp 3 ways. Black bean scallops with butter shrimp and cucumber mint salad.

To the left: shrimp with garlic and butter and crispy sage garnish.
To the right: shrimp with chorizo, tomato, garlic, onion, parsley and cilantro. Lots of fresh lemon squeezed on top.
Matt asked me to be his girlfriend (cute story) on Thanksgiving 2010. Therefore it seemed appropriate to cook the turkey that’s been sitting in the freezer for our 6 month anniversary.
The party started with a friendly game of Wii. Matt rocked Mario World yet somehow his remote became “defective” during our bowling match. Ciders were consumed and a dance party ensued.
The turkey turned out to be one of the best birds I’ve ever eaten.
