I love weekends

Married life is fantastic.
This weekend, Matt and I took a little trip to Mill Bay for a change of scenery. We partied at the Wessex Inn until the wee hours and came back home the following day to celebrate Matt’s name day with a huge B.B.Q.

Chicken roulade

Finely chop 1/2 red onion and 1/2 pear and sauté in butter until caramelized.
Mix in 1 teaspoon balsamic vinegar reduction(mom makes the best).
Flatten 2 chicken breasts, season with salt and pepper.
Spread 1 teaspoon of goat cheese on chicken and add half the onion mixture.
Roll the chicken breast as you would with sushi.
Tightly wrap the chicken in plastic wrap and submerge in boiling water for 15 mins.

Camping in the sky

Matt and I are camping fanatics. Last year we went camping in Port Renfrew in 6 degree weather at the beginning of March. Not feeling as bold today, we decided to set up our tent in the living room. The cat is happy to be part of the experience.

Sunday night dinner

Mushroom Gnocchi, buttermilk chicken with cashew green salad.

12 chicken drumsticks
2 cups buttermilk
2 tablespoons oil
2 crushed garlic cloves
1 tablespoon salt
1 teaspoon cumin
1 tablespoon maple syrup

Throw everything in a ziplock bag and let sit for at least 30mins(over night if possible). Preheat the oven to 425 degrees F. Pour everything into a roasting pan and roast for about 40mins.

More Rick Steves

In the summer months of 2011, my friend Carla and I explored Europe for the first time. We spent six full weeks exploring seven unique countries. Spending that length of time with the same person undoubtedly lends to lulls in conversations yet we found fun little games to spice things up. I opened with, “find the person with the oddest moustache”, who was spotted in Amsterdam. Next, “find the person with the largest feet”, so on and so forth. One of my favorite ones was spotted in Venice, “find Rick Steves’ look-a-like”.

I think we nailed it.
